Double-Baked Chicken

Double-Baked Chicken with Sandra's Chicken Kiev


  1. Bake Sandra’s Chicken Kiev according to the package instructions.
  2. While the chicken is in the oven, prepare your favorite mashed potatoes.
  3. When the chicken is done, remove from the oven and let cool enough to touch.
  4. Cut the chicken in half like a sandwich bun.
  5. Pour the buttery filling from the portions and baking pan into the mashed potatoes; mix well.
  6. Place your newly created chicken boats (4) onto the same baking sheet.
  7. Spoon the mashed potatoes into the chicken boats.
  8. Sprinkle the tops with cheddar cheese.
  9. Bake the assembled chicken boats at 375 degrees F for 5 minutes to melt the cheese and firm up the potatoes.
