Chicken, Broccoli and Swiss Waffle Fry Poutine

Chicken, Broccoli and Swiss Waffle Fry Poutine
 

Directions

  1. Preheat oven to 375 degrees. Prepare Sandra's Chicken, Broccoli and Swiss according to package directions.
  2. After chicken is fully cooked, allow to cool slightly. Carefully cut into 1/2-inch slices, then cut the slices in half.
  3. Place the frozen waffle fries, in a single layer, onto a greased baking sheet and bake for 15 minutes, flip fries and continue cooking until cooked through and lightly browned, approx. 12-15 minutes. Season the fries with the salt as soon as they come out of the oven.
  4. Meanwhile, place a large skillet over medium-high heat. Add in the bacon and cook until crispy, approximately 3-4 minutes per side; drain; cool slightly, then crumble.
  5. In a small saucepan, place the gravy mix and 1 cup water; whisk together. Heat over high heat until it boils, then reduce heat to medium low and cook until thickened, approx. 1 minute. Add in the Swiss cheese, stirring until melted into the sauce. Just prior to assembling, stir in the remaining 1/4 cup water.
  6. To assemble the poutine, evenly divided the waffle fries onto two serving plates, top each with one full cut-up piece of chicken, being sure to include all the filling of the chicken. Drizzle with the cheesy country gravy, then top evenly with the bacon and scallions. Garnish with additional shredded Swiss cheese.
